Grilled Portobello Mushroom Burgers with Red Onion, Roasted Red Peppers, Spinach, Provolone & Pesto Mayonnaise
The Portobello Mushroom ~ they've been coined "the steak" of the mushroom world due to their thick, meaty texture and ability to soak up flavors.
Portobello mushrooms are an excellent option for vegetarians or for those cutting back on their red meat consumption - simply substitute half of your steak with some grilled Portobello...the mushrooms will take on the flavor of the meat while leaving you full and satisfied!
Here I made "melt in your mouth" Portobello Mushroom Burgers. I began by marinating the Portobello mushroom caps in....
a mixture of Worcestershire sauce, olive oil, garlic, seasonings and fresh herbs. (Recipe and Instructions Follow...)
After about an hour or so of marinating - grill the mushrooms, some red onion slices and assemble ingredients....
Toast bun, melt the cheese and...

Grilled Portobello Mushroom Burgers with Red Onion, Roasted Red Peppers, Spinach, Provolone and Pesto Mayonnaise
Marinate Portobello Mushroom Caps:
8 Portobello Mushroom Caps, cleaned
1-2 red onions, peeled of skin and cut into 1/2 inch sliced circles
1/2 cup Worcestershire Sauce
1/4 cup Olive Oil
2 cloves of garlic, diced
2 tsp steak seasoning (I used McCormick)
1 tsp kosher salt and fresh cracked black pepper (optional - only add if you think the marinade needs it)
A few sprigs fresh rosemary, sage, oregano and thyme (optional - I have tons growing in the garden so figured why not use it!)
Place all ingredients in a Ziploc bag and squish all around (careful not to break the mushroom caps).
Allow to marinate for no less than 30 minutes, preferably 1 to 2 hours.
Prepare your Pesto Mayonnaise
Simply mix together 4 tablespoons of quality store bought Mayonnaise with 1-2 teaspoons quality store bought (or homemade) pesto.
Stir together and adjust to your specific taste.
Prepare your Grill
Preheat your grill to high and grill the red onion slices until lightly charred on each side about 5-6 minutes each side.
Grill your marinated mushroom caps about 4-5 minutes on each side.
Prepare your Bun
Preheat your broiler and place one slice of provolone cheese on the bottom part of bun (cheese folded to fit nicely on the bun).
Place both sides of your bun (inside facing up of course) under the broiler until the cheese is melted and the bun is crispy and browned on the edges. Keep an eye not to burn the bun!!!!
Once the cheese is melted, remove from broiler and spread the other side of your bun with the prepared Pesto Mayo.
Top your Portobello Mushroom burger with the grilled red onion, roasted red pepper slices and fresh spinach or arugula. Enjoy!
